Bake a Cake and Roast a Chicken

It was a day of fun, fun, fun. We decided to cook something for Aunt Cleo's birthday. The kids did a simple baking project while I attempted to roast a chicken for the first time. The cake turned out ok - very little can go wrong with pre-mix <> while my chicken did not really look fabulous, it tasted ok; with just the right amout of salt. 

I am now itching for more simple baking projects with the kids since they enjoyed the experience. Making cookies did come to mind - so is making ginger bread and muffins. I am also itching to try out new recipies myself. Roast chicken is the first and finger crossed for many, many more new adventures. Life is good and am enjoying it.

Bake a Cake......

We were going for a family gathering and as usual, I will go and buy food, instead of cooking them, for the safety of those attending the gathering :)

However, Ryan decided to bake a cake for the occasion and we went to get pre-mix (to be very safe). He and his sister did the baking as part as their project and the cake turned out well. It was easy for the kids (and me) and the result is almost guarantee...

Win-win-win.....

Cooking......

Rendang Ayam
I suddenly have an urge to cook and try new recipes... not sure why but I did spent a lot of times in the kitchen toiling away and I ended up making 3 new dishes - for the first time. 1. Rendang ayam - which was yummy  2. Drunken chicken - too much shoaxing wine  3. Chap choy (a vegetarian dish) - could be better, hubby's family favourite dish.

Anyway, I managed to take photos of the rendang ayam and the drunken chicken. Not too bad and I think I will make it a point to try out at least 1 new dish a month. Something to look forward to :)

White, Brown and Red Rice

A good friend recently introduced me to other types of rice, besides the common white rice. I have heard of brown rice but don't quite like the taste but I have not heard about RED RICE!! Yes, the rice is indeed red in colour.

Not only she took the trouble to buy me these difference rices, she also taught me the right mix for them. For a start, 40% white and the rest will be red and brown in equal portion (i.e. 30% each) . We tried it out the whole of last week and simply loved it. I like the rough texture of the red rice, best. Great taste and simply a healthier choice.

Spaghetti

Here are some of the ingredients for my spaghetti. I will cook this whenever I am lazy to think. Unlike our typical chinese meals which typically consist of rice and at least 2-3 main dishes, spaghetti is a no-brainer. Everything in 1 - simple and delicious !!!

Cajun Chicken Pasta

Somehow, the cooking bug (if there's such a thing) bite me. I surfed the world wide web and found some simple (yeah, this is important) and great recipes and I decided to cooked "Cajun Chicken Pasta' since it would be non-spicy. Actually, the real reason I choose this recipe is because it sounded simple enough. The recipe is from Ree Drummond of thePioneerWoman blogv(http://thepioneerwoman.com/cooking/?s=cajun+chicken+pasta) which I have been following. There are lots of photos and step-by-step instructions which is really, really helpful for me. Love her work, talent and her energy :)

The pasta turned out GREAT and since then, I have tried out a few other recipes from her website. Did not have the time to take a photo of the finish product (i.e. the pasta) as I was too tired by then and my family including guests were to hungry to wait. Cheers.

Leftover Meat on Bread....Just As Nice

I was hungry. Ransack the fridge. Saw some leftover meat in a small container. Hmm......this should do the trick!!
Took a few eggs.
Refried the meat and added the eggs.
Piled them on a piece of bread.
Gobbled up everything.
Wash it down with a cup of Milo.

Outcome: A Happy Me
